This wild and organically grown coffee is from a small-size cooperative in the highest-altitudes of Chiapas, Mexico, in the buffer zone of the UNESCO protected biosphere reserve. Purchased using a cherry purchasing model, the farmers were paid $0.45/kg for hand-sorted premium red cherry (approximately 6.5kg of cherry will produce 1kg of green bean), one of the highest prices paid in Mexico in 2021 where the payment was made upon collection at farmgate.
